Stir-fry your kale with crispy garlic and savory bacon for a healthy meal filled with rich flavor.
This one-pan dish is filled with plenty of low-carb ingredients, along with protein and healthy fats to keep you fed and fit. Toss it together in just 20 minutes for a quick-fix meal any time of the week.
For this recipe, we add a bit of balsamic vinegar to balance out the strong bitter flavor of kale. We then toss it with a small amount of rendered bacon fat to allow the kale to tenderize and meld with the crispy garlic. Tip: If you prefer to leave out the vinegar, you could also sub in one tablespoon of lemon juice instead.

To get started, sauté the bacon pieces in a large skillet over medium-high heat. Cook for 10 minutes, flipping halfway through, and set the bacon pieces aside. Save the rendered bacon fat and use half of it to brown the garlic slices on each side.
When the garlic slices are toasted, set them aside and grease the pan with the remaining bacon fat. Toss in the kale leaves and sauté until slightly wilted. Drizzle the balsamic vinegar on top and mix well to fully combine.
Then, cook the eggs sunny side up and divide the sautéed kale between two plates. Garnish with bacon and garlic, then top each plate with an egg. Sprinkle with salt and pepper before serving and enjoy!

- 5 slices bacon, cut into 1-inch pieces
- 5 garlic cloves, thinly sliced
- 4 cups chopped kale leaves
- 1 T balsamic vinegar
- 2 eggs
- Salt and pepper, for garnish
Instructions
- Sauté the bacon pieces in a large skillet over medium-high heat for 10 minutes, tossing halfway through. Reserve the bacon fat and set the cooked bacon aside.
- Use half the bacon fat to brown the garlic slices, cooking for about 1 minute on each side. When finished, remove them from the pan and set aside.
- Sauté the kale with the remaining bacon fat over medium heat and toss together with a wooden spoon. Cook for approximately 3 minutes or until the leaves begin to wilt.
- Drizzle the balsamic vinegar over the kale and toss to fully coat. Remove it from the pan and divide between 2 serving plates.
- Cook the eggs sunny side up and place over the kale with bacon and garlic.
- Sprinkle with salt and pepper on top, then serve and enjoy!
