- 2 medium sweet potatoes, peeled
- 16 slices thin-cut bacon, fat trimmed
Instructions
- Preheat oven to 400°F.
- Cut the sweet potatoes lengthwise into even-sized slices, around 4 inches long and ½-inch wide.
- Wrap each sweet potato wedge with a slice of bacon and place in a single layer on a baking sheet.
- Bake for 20 minutes, then flip fries and bake for another 20 minutes or until the bacon is crispy. Serve immediately with guacamole for dipping.
