For this recipe, we use chia seeds to increase healthy fats, protein, and minerals to help keep you satisfied for hours. When added to liquid (in this case, almond milk), they magically plump up and absorb the extra moisture needed to expand. The longer the chia seeds soak, the thicker the pudding becomes.

Cacao powder lends a rich chocolatey flavor to this pudding, while amping up heart-healthy antioxidants to help boost your mood. (1) For extra sweetness, we add in a bit of pure maple syrup to compliment the vanilla.
To get started, combine the chia seeds, almond milk, cacao powder, maple syrup, and vanilla into a blender. Pulse on high for 15 seconds or until the mixture is smooth. Distribute the pudding evenly into two serving jars and refrigerate for at least 30 minutes.
When you’re ready to serve, sprinkle with cacao nibs and enjoy! You can also add in other toppings like sliced berries, shaved coconut, or chopped nuts for extra fun.

Ingredients
- 2 cups unsweetened almond milk
- 2 T cacao powder
- 1/3 cup chia seeds
- 2 T maple syrup
- 1/2 t vanilla extract
- 1 T cacao nibs, for serving
Instructions
- Combine all the ingredients (except for the cacao nibs) into a blender. Pulse on high speed for 15 seconds or until smooth.
- Divide the pudding into 2 jars and refrigerate for 30 minutes.
- Sprinkle with cacao nibs before serving and enjoy!
