The humble avocado repurposes your tuna salad from a sandwich staple to a sophisticated and filling Paleo lunch. If tuna is not your thing, this works equally well with salmon.

Tuna and Avocado Boats
Ingredients
- 1 can tuna, packed in water
- 1 scallion, finely chopped
- 1/2 rib of celery, finely chopped
- 4 tablespoons Paleo mayo
- pinch sea salt
- pinch black pepper
- 1 large avocado
- 1 tsp lemon juice (optional)
Directions:
- Open your can of tuna and squeeze out the water. Give the water to your cat or dog.
- Dump your tuna, scallion and celery into a medium bowl.
- Grab a fork and break up the tuna a bit.
- The quantity of mayo in a tuna salad is really personal preference, so don’t add all four tablespoons at once. Add some, and mix it up. Continue until you have a texture that looks right to you.
- Salt and pepper to taste.
- Halve your avocado and remove the pit.
- Spoon your tuna salad into the avocado, filling the cavities left by the pit.
- If you are making ahead, sprinkle some lemon juice onto any exposed avocado flesh to prevent oxidation.
