Ingredients
- 2 cups almond meal
- 1/2 cup honey
- 2 tablespoons water
- 2 teaspoons almond essence
- 1/2 cup dried apricots
Directions:
- Place the almond meal, honey, water and almond essence into a food processor and blend until combined. Add more honey and/or water (depending on taste) if the mixture is too dry.
- Add the dried apricots and pulse to chop 6-8 times to combine into the marzipan while still leaving apricot pieces.
- Place the marzipan into a bowl and knead with your hands until firm and all together.
- Place the mixture onto a clean, flat surface and roll out using both your hands to create a sausage shape, roughly 1 inch in diameter.
- Cover the marzipan in baking paper then place into the freezer for 4-6 hours or until hard.
- Slice the marzipan roll into individual serves then return to the freezer or place into the fridge before serving.
