This may be the most refreshing summer salad ever. The key to making this salad really stand out is to slice the melons as thinly as you can. It helps to have melons that aren’t overly ripe, so choose ones that are slightly firm.
On second thought, I’m not sure if this recipe should really be called a salad… it could probably pass as dessert!
Sweet, fresh melons are the perfect companion to salty prosciutto, and the berries, chives and lemony dressing make the flavors pop! Enjoy this on a warm summer’s evening.

Melon & Prosciutto Summer Salad Recipe
Ingredients
- 2 cups Cantaloupe, thinly sliced
- 2 cups Honeydew, thinly sliced
- 1 cup fresh Blackberries, halved
- 8 oz Prosciutto
- 3 Tablespoons chives, snipped
- 1 lemon, juice and zest
- 1 shallot, minced
- dash of crushed red pepper
- dash of sea salt
How To Make It:
- Arrange the melons, berries and prosciutto on each plate. Sprinkle with snipped chives.
- In a small bowl combine the lemon juice and zest, shallot, red pepper and salt. Mix well then drizzle over the plated salads.
