To get started, wash four lemons and cut them into small quarter-inch pieces. Remove any seeds and combine the lemon pieces with water inside a blender.
Next, pulse the mixture and pour the liquid into an ice cube mold. Tip: If you find the lemon cubes are too sour, add a tablespoon of raw honey. You can also add one tablespoon of water if the mixture is too thick.
Transfer the molds into the freezer and chill for at least three hours, or until solid. When ready, remove from the molds. You can blend them into smoothies, soups (like chicken soup) or pasta sauces for a natural zest. Store lemon cubes in the freezer for up to six months.

Ingredients
- 4 medium organic lemons, washed clean
- ½ cup purified water
Instructions
- Cut the lemons into small pieces and remove the seeds.
- Place the lemons in a blender together with the water and blend until fully combined. If the mixture is too thick, add a tablespoon of water at a time.
- Pour the blended lemons into the ice cube mold and freeze for three hours, or until solid.
- Remove the lemon cubes from the mold or keep in the freezer until ready to use!
