For this recipe, all you’ll need is a large saucepan and a blender to get started. Heat the saucepan over medium heat with a bit of olive oil. Toss in the onion, garlic, and curry to sauté until translucent. When ready, add in the apples with nutmeg and continue cooking for another three minutes. You’ll want to ensure that the apples start to soften during this process.
Next, stir in the cauliflower, carrots, and chicken broth. Bring the ingredients to a boil and then reduce the heat to low. Let the soup simmer for about 20 minutes so that the cauliflower and carrots have time to tenderize.
When ready, carefully pour the contents into a blender and pulse until smooth. Divide the mixture into six to eight servings and sprinkle with salt and pepper to taste. Garnish with a few sprigs of chives on top and serve immediately!

- 2 cups peeled apples
- 1 t nutmeg
- 5 cups cauliflower florets
- 2 cups carrots, cubed
- 6 cups chicken broth
- Salt and pepper to taste
- Sprigs of chives, to garnish
Instructions
- Heat oil over medium heat in a large saucepan. Sauté the onion, garlic, and curry for 8 minutes, or until translucent. Add in the apples with nutmeg and continue cooking for 3 minutes, or until apples begin to soften.
- Add the cauliflower, carrots, and chicken broth to the saucepan. Bring to a boil and turn the heat to low. Simmer for about 20 minutes, or until the cauliflower is tender.
- Pour the mixture into a blender and pulse until smooth.
- Add salt and pepper to taste, then garnish with a few sprigs of chives.
- Serve and enjoy!
