- 2/3 cup sweet potatoes, peeled, cooked, and mashed
- 3 large pasture-raised eggs
- 1/4 cup melted ghee, plus extra for greasing
- 2/3 cup unsweetened coconut milk
- 1 1/2 cups cassava flour
- 1 T coconut sugar
- 2 t baking powder
- 1/4 t sea salt
- 4 strips pasture-raised bacon, cooked and chopped
Instructions
- In a medium bowl, combine sweet potato, eggs, ghee, and coconut milk. Whisk until thoroughly combined.
- In a separate bowl, stir together cassava flour, coconut sugar, baking powder, and sea salt.
- Add the wet ingredients into the dry and stir in the chopped bacon.
- Heat a waffle maker to medium heat and pour a 2/3 cup of batter into the center. Close the lid and cook for six minutes, or until fully cooked. Repeat with the remaining batter.
- Serve warm and enjoy!
