The secret to this easy brownie recipe? Pitted dates! They’re the glue that holds everything together, giving the brownies a sweet, sticky texture that’s perfect for holding together no-bake bars.
Did someone say no-bake? That’s right, these brownies require no cooking of any kind. Just a few spins in a large, high quality food processor will get the job done.

Before processing the ingredients, it’s important to soak the dates for at least 20 minutes. This helps break down some of the fiber, making the dates softer. Perfect for bending them into ooey, gooey, smooth brownies. Tip: The longer you soak the dates, the smoother the batter will be. Make sure the dates are pitted, too!
Once the ingredients have been blended together, transfer it to a small baking pan lined with parchment paper for easy cleanup. Be sure to smooth the batter into an even layer, pressing it well into the bottom of the pan and into the corners. This will help it set and make it easier to cut into six bars. A damp spatula or wet hands are handy tools for doing this.
After 20 minutes of chill time in the refrigerator, the brownies will have set and are ready to be sliced. Serve them immediately with a sprinkle of unsweetened coconut flakes on top, or keep them in an airtight container in the refrigerator up to 7 days.

- Food processor
Ingredients
- 2 cups almond meal
- 1 ½ cups dates, pitted and soaked in water 20 minutes
- ½ cup raw cacao powder
- 1 t vanilla extract
- Unsweetened coconut flakes (optional topping)
Instructions
- Add all ingredients to a food processor. Process on high for several minutes until the ingredients clump together into a ball. The batter will be thick and sticky.
- Transfer the batter to a baking pan lined with parchment paper.
- Spread the batter into a thin, even layer, pressing it well into the bottom of the pan and into the corners.
- Refrigerate 20 minutes, then remove and slice into 6 bars. Sprinkle the tops with unsweetened coconut flakes if desired, and enjoy!
