This rainbow slaw is perfect for this time of year. It is packed with nutrition such as vitamin C which is great for helping to ward off colds, keep immune levels high and help to balance stress in the body. Even though it is not a hot dish and you might prefer to reach for a big bowl of hot food, this recipe is more than ideal for nourishing the body.
This makes a big batch and is great for a few days to go alongside lunch. Perfect for when you don’t want to be making lunch every single day!

Ingredients
- ½ large red cabbage or 1 small red cabbage
- 3 medium to large carrots (approx. 200g)
- 2 handfuls of Brussel sprouts (approx. 150g)
- Sea salt
- 3 tsp green powder (i.e. kelp, moringa, spirulina or chlorella)
- Optional: Add juice of 1 lemon or lime. Add ½ mango chopped or an apple chopped. This gives a nice sweet taste to the mix!

- Grab all the fresh vegetables ready to grate.
- Use a food processor with a grating blade to grate the vegetables.
- Grate the red cabbage, sprouts and carrots and add them all to a big mixing bowl.
- Add the green powder and sea salt if using, and mix together.
- Add the chopped mango or apple if using, and mix together.
- Serve in a bowl alongside your preferred protein.
- Keep it refrigerated and eat up within 2 to 4 days.
