To start, place the blueberries, lemon juice, and honey in a large skillet over medium-low heat. Let the berries cook, stirring them with a wooden spoon for a few minutes until they begin to burst. You’ll notice the water begin to steam and turn light purple in color.
Blend the ingredients together until everything is smooth. Then, slowly add the gelatin powder and continue blending until the gelatin fully dissolves. Pour the mixture into a silicone mold and let it chill for at least 50 minutes or until the gummies are firm. If you don’t have a silicone mold, you can also pour the liquid into a glass container and cut the gummies into squares when firm. Once ready, remove the gummies from the mold and enjoy!
Tip: Make sure you’re using 100% raw, all-natural honey to reap the full benefits of this superfood. Avoid any honey that contains added ingredients like agave or high fructose corn syrup. We recommend Paleo-friendly brands like Beekeeper’s Naturals Raw Honey (they’re our all-time favorite) that are sustainably sourced and tested rigorously for quality.
