This sunny TropiKale Smoothie tastes like summertime thanks to pineapple and mango, and also has kale for added nutrients!
KALE YEAH. That’s the first thing you should be thinking when you wake up.
Kale is one of my favorite vegetables to keep in the kitchen. You can eat it raw or cook it with a bit of olive oil. So, I decided to turn it into a refreshing smoothie — just in time for summer.

The recipe calls for coconut water instead of dairy-free milk, but feel free to use plain water if you don’t have coconut water on hand. The coconut definitely adds a punch, though.
Either way, I think we should all strive to start our mornings with kale, even if (especially if!) it’s in smoothie form.
- 1 cup pineapple
- 1 mango
- 1 cup kale, stems removed
- Juice from 1 lime
- 1/4 cup coconut water
How To Make It:
1. Chop up kale, mango and pineapple.
2. Place all ingredients into a blender. Blend until smooth.
3. Enjoy by itself as a quick refresher or with a hearty chicken salad for lunch!
