Two Paleo Granola Recipes
Cocoa Nibs, Apricot & Pine-Nut Granola
Serves 2-4

Ingredients
2/3 cup shredded coconut
1/3 cup pine-nuts
1/3 cup chopped walnuts
1 tablespoon powdered stevia
1/3 cup dried apricots, chopped
4 tablespoons cocoa nibs
Almond milk to serve
Instructions
Place the shredded coconut, pine-nuts and walnuts into a small frying pan on low heat and gently stir until lightly toasted.
Remove the pan from the heat and allow to cool slightly before adding the remaining ingredients and combining.
Serve with almond milk.

Raspberry and Goji Berry Granola
Serves 2
Ingredients
1/2 cup pistachios
1/2 cup walnuts
2 cups fresh raspberries
1/2 cup dried goji berries
1/2 teaspoon cinnamon
2 tablespoons raw honey
Almond milk to serve
Instructions
Place the pistachios and walnuts in a food processor and blend until the mixture resembles a coarse meal. Transfer the mixture into a large bowl and add the raspberries, goji berries, cinnamon and raw honey then mix to combine.
